Aunt Margie's Macaroni Salad w Chicken Salad

My Aunt Margie makes the best chicken salad! I could eat bowls and bowls of it! Aunt Margie's Macaroni Salad w Chicken Salad  Ingredients 1 (16 oz) box elbow noodles 1 large ( at least 12.5 oz) can chicken breast Hellman's Mayo Miracle Whip ( just a little bit) Yellow Mustard ( just a little bit) green olives, sliced in half carrots, sliced into small pieces sweet pickles, sliced into small pieces dash of pickle juice onion ( if desired) Mrs Dash ( I used Montreal Steak Seasoning, because it's my favorite seasoning to use!) Directions 1. Cook, drain, and cool pasta. 2. Add the rest of the ingredients to your taste. Thanks Aunt Margie!

Slow Cooker Chicken Gyros

One of my all-time favorite meals is gyros! I found this recipe for chicken gyros on Pinterest: http://www.sixsistersstuff.com/2013/03/slow-cooker-chicken-gyros.html Slow Cooker Chicken Gyros  Ingredients  1 lb boneless, skinless chicken breasts 3 cloves garlic, minced 1/4 cup fresh lemon juice 1 onion, sliced 1/4 cup water 1 Tbsp olive oil 2 Tbsp red wine vinegar 1 tsp oregano 1/4 tsp allspice 1 tsp lemmon pepper ( I just used black pepper.) Directions   1. Spray crockpot with non-stick cooking spray. Place chicken breast inside slow cooker. 2. Mix remaining ingredients together in a bowl and pour over chicken breasts. 3. Cook on high for 3-4 hours or low for 6-8 hours. Shred chicken and serve with pita bread, sliced tomatoes, onions, cucumbers, lettuce and tzatziki sauce. ( I cooked mine on high for 3 hours.)

Beer brats

Since I have German heritage, I was born to love brats! Check out this recipe I adapted from allrecipes.com:  http://allrecipes.com/recipe/beer-brats/detail.aspx Beer Brats  Ingredients 4 ( 12 oz) cans beer 1 large onion, diced 10 bratwurst 2 tsp red pepper flakes 1 tsp garlic powder 1 tsp salt 1/2 tsp ground black pepper Directions  1. Preheat your grill to medium-high heat. When hot, lightly oil grate. ( I used a pan on my stovetop since I live in an apartment.) 2. Combine the beer and onions in a large pot and bring to a boil. Submerge the brats in the beer and add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook for another 10-12 minutes. 3. Remove the brats from the beer and reduce the heat to low. Continue cooking the onions. 4. Cook the brats on the preheated grill, turning once, 5-10 minutes.  (I cooked my brats in a pan with butter.)Serve with the beer mixture as a topping or a side.

Roasted Parmesan Brussel Sprouts

Brussels sprouts used to be on the bottom of my "vegetables I like to eat list," but lately I've been liking them! http://homemakerchic.com/2012/10/04/roasted-parmesan-brussels-sprouts/ Roasted Parmesan Brussel Sprouts  Ingredients  brussel sprouts olive oil salt pepper garlic powder parmesan cheese Directions  Preheat oven to 400 degrees. 1. Cut the sprouts in half, lengthwise and place into a bowl. 2. Drizzle with olive oil to lightly coat each piece ( don't overdo it, or else they will be greasy). 3. Add salt, pepper, garlic powder, and parmesan cheese. 4. Pour onto a baking sheet and roast for about 20-25 minutes, flipped about halfway through to make sure they roast on both sides.

Sweet and Savory Slow Cooker Pulled Pork

(This recipe makes 10 servings.) Sweet and Savory Slow Cooker Pulled Pork  Ingredients  1 ( 4.5 lbs) bone-in pork shoulder roast 1 cup root beer 2 1/2 Tbs light brown sugar ( I used dark, because that's what I had.) 2 tsp kosher salt 1/2 tsp ground black pepper 1 1/2 tsp ground paprika 1/2 tsp dry mustard 1/2 tsp onion powder 1/4 tsp garlic salt 1/4 tsp celery salt 1/4 tsp ground cinnamon 1/4 tsp ground ginger 1/4 tsp ground nutmeg 1/3 cup balsamic vinegar 1 1/2 cups root beer 1 1/2 fluid oz whiskey 1/4 cup brown sugar 1 tsp olive oil 3/4 cup prepared bbq sauce Directions  1. Place the pork shoulder roast into a large plastic bag and pour 1 cup of root beer over the meat. Squeeze all of the air out of the bag. Seal the bag and refrigerate 6 hours to over night. ...

Basic Tilapia

Tilapia has an amazing taste and is quite inexpensive too! Mark created his own simple recipe to cook up some fish! I also made a simple sauce to go with it! Basic Tilapia  Ingredients  Fish  light olive oil 4 tilapia filets salt pepper flour Sauce mayo lemon juice Directions  1. Place some light olive oil in a pan on medium high heat. 2. Rinse fish in water and pat dry with paper towels. Sprinkle each side of the filets with salt and pepper ( to your liking). 3. Cover each side of the filets with flour. 4. Place the filets in the heated pan. Cook each side of the files for about 4 minutes each, or until the fish is cooked through. Mix mayo with a little bit of lemon juice for a lovely dipping sauce! I also sprinkled some panko crumbs for a little extra texture.

Spicy Orange Chicken Stir-Fry

I love Chinese takeout, but I usually feel icky after I eat it. Here's an adaptation of a recipe (  http://www.food.com/recipe/spicy-orange-chicken-stir-fry-342823  )  that won't make you feel yucky! Serving size: 6 ( I cut the recipe in half since I was just cooking for two people.) Spicy Orange Chicken Stir-Fry  Ingredients  1/3 cup cornstarch 2 cups orange juice 1/2 cup soy sauce 1/2 cup rice vinegar 1/4 cup honey 6 garlic cloves, minced 1-2 tsp red pepper flakes salt and pepper ( to taste) 1 Tbs vegetable oil 6 boneless skinless chicken breasts, cut into 1/2 inch strips ( I cut them into cubes because it was easier.) 1 head broccoli, cut into florets 5 carrots, peeled and sliced 1 ( 8oz) can water chestnuts Rice ( desired amount) Directions  1. Philly Cheese Steak Sloppy Joes

One of my favorite things when I visited Philadelphia was eating a true Philly sandwich! Cheddar Bits

Almost every night before I go to sleep, I watch cooking shows on the Create channel on tv. One night, I watched an episode of Martha Bakes. Martha Stewart made Cheddar Bits (aka cheese crackers), and I knew I would have to make my own! These wonderful crackers remind me of cheese straws! http://www.marthastewart.com/1066175/cheddar-bits#1066175 Ingredients  1/2 cup ( 1 stick) unsalted butter at room temperature 2 cups grated aged cheddar ( I just used Kraft shredded sharp cheddar) 1 1/2 cups all purpose flour 1 tsp salt 1/4 tsp cayenne pepper 1/2 tsp sweet paprika ( I used regular paprika) 2 Tbs heavy cream Directions  1. Pulse butter, cheddar, flour, salt, cayenne pepper and paprika in a food processor until the mixture resembles course crumbs. Add the heavy cream and pulse until just combined. 2. I remember coming home one day to the amazing smell of potatoes, garlic, and peppers. Here's my husband's recipe for some good ol' taters!  Ingredients  olive oil  small gold potatoes, washed  orange pepper  garlic, chopped  salt and pepper to taste  Directions  1. Heat olive oil in a sauté pan on medium heat for about 5-10 minutes.  2. Cut potatoes into small round shapes.  3. Place potatoes, orange pepper, chopped garlic, salt and pepper into the pan and heat until potatoes are crispy. While the potatoes are cooking, flip them so they get crispy on both sides.

Easy Potato Skins

I wanted a good side dish for a Super Bowl meal, so I found this recipe for potato skins: http://www.iheartnaptime.net/easy-potato-skins-recipe/  Ingredients 4 large baking potatoes (washed) 3 Tbsp butter, melted 2 tsp kosher salt 1 1/2 - 2 cups shredded cheese 7 slices of cooked bacon, crumbled Directions  Preheat oven to 400 degrees. 1. Cover baking sheet with tin foil and spray with non-stick cooking spray. Set aside. 2. Wash potatoes and cut the ends off and discard. Cut the potatoes into approximately 1/2 inch slices. 3. Brush both sides and edges of the potatoes with butter and sprinkle with salt. 4. Place potato slices onto the foiled pan and bake for 30-40 minutes, or until lightly golden brown. Turn potatoes onto the opposite side after about 15 minutes and put the pan back into the oven. 4. When potatoes are done, top with cheese and bacon. Put the pan back in the oven for about 3-5 minutes, or until the cheese is bubbly.

Olive Garden Chicken Giardino

Mark said one of his favorite dishes at Olive Garden is Chicken Giardino. I typed in "chicken giardino" into Google, and a recipe on the Olive Garden website came up! http://www.olivegarden.com/recipe/chicken-giardino/man-imp-reci-prd-104  I added some changes and suggestions to the recipe. I made half of the recipe so I wouldn't have too many left overs. I kept the same amounts for the sauce ingredients. I would recommend at least doubling the sauce. McNabb X-Mas Cookies

Here's a family recipe for sugar cookies. Ingredients  1/2 sugar 2 1/2 cups flour 1 egg 1 1/2 cups powdered sugar 1 cup butter (soft) 1 tsp. cream of tarter 1 tsp. vanilla 1 tsp. baking soda Directions  Preheat oven to 375 degrees. 1. Mix all ingredients into a ball. Refrigerate for 2 hours. 2. Roll out and cut cookies. 3. Place cookies onto an ungreased cookie sheet and bake for 9 minutes.

Tahitian Coconut Bread

When I lived in Hawaii, I received this recipe from the Polynesian Cultural Center. Sooooo ono! Ingredients  2 cups fresh grated coconut 4 cups flour 2 tsp baking powder 1 1/2 cups sugar 1 1/2 cups water Directions  Preheat oven to 350 degrees. 1. Combine coconut, sugar, and water. 2. Blend flour and baking powder together. 3. Mix all ingredients until a doughy texture forms, adding a little flour as needed so it is not too sticky. 4. Separate the dough into 5 equal parts ( will become loaves) and roll each part into the size of a hot dog bun. 5. Wrap each part in aluminum foil and bake for 1 hour to 1 1/2 hours. ( Makes 5 loaves.)

Pretzel Jello Salad

This is one of my favorite desserts that my mom makes! Ingredients  2 cups of pretzels, crushed 2 tablespoons granulated sugar 3/4 cup butter 8 oz package cream cheese 1 cup granulated sugar 1 small carton of cool whip 2, 3 oz packages of strawberry jello 2 cups boiling water 2, 10 oz packages frozen strawberries (partially thawed) Directions  Preheat oven to 400 degrees. 1. Blend the crushed pretzels, 2 tbs. granulated sugar, and butter. Spread into a 9x13in pan. 2. Bake for 8-10 minutes. (Don't over bake!) Let cool. 3. Blend the cream cheese and 1 cup of sugar. Blend in the cool whip. 4. Spread over the pretzel mixture. 5. Add the boiling water to the strawberry jello, then mix in the frozen strawberries. 6. Set in the refrigerator for 10 minutes. 7. Pour over cream cheese mixture and refrigerate until set.

Skinny Orange Chicken

Mark and I were talking about how we love Chinese food, but it's usually loaded with salt. Turkey Meatballs

Lately I've been loving ground turkey recipes! Here's a turkey meatball recipe I adapted from: http://www.sixsistersstuff.com/2012/10/homemade-turkey-meatball-subs-recipe.html Ingredients:  1 lb ground turkey 1/2 cup bread crumbs 1 teaspoon dried basil 1 teaspoon dried oregano 1 teaspoon dried parsley 1/2 teaspoon garlic salt 1/2 cup grated Parmesan cheese 1 large egg 2 tablespoons olive oil 1 tablespoon Montreal steak seasoning Directions:  Preheat oven to 425 degrees. 1. In a large bowl, mix the turkey, bread crumbs, basil, oregano, parsley, garlic salt, Parmesan cheese, egg, olive oil and steak seasoning. 2. Form meat into 1-1/2" meatballs and place them onto a greased cookie sheet. ( I used an ice cream scoop to form the balls.) 3. Bake for 15 minutes, or until cooked through. Serve with pasta and marinara sauce.
