Oatmeal Cream Pies
One of my favorite sweet treats as a kid was Little Debbie Oatmeal Cream Pies. I mixed two recipes together to get a perfect combination for a delicious homemade oatmeal cream pie. That makes it healthier, right?

Ingredients
Cookie
2 cups packed brown sugar
3/4 cup butter
2 eggs
1/2 tsp salt
1 tsp ground cinnamon
1 tsp baking powder
3 Tbs boiling water
1 tsp baking soda
2 1/2 cups all-purpose flour
2 cups quick cooking oats
Filling
3/4 cup ( 1.5 sticks) unsalted butter, softened to room temperature
3 cups powdered sugar
3 Tbs heavy cream
1 1/2 tsp vanilla extract
pinch of salt, as needed
Directions
Preheat oven to 350 degrees F. Lightly grease baking sheets.
Cookies
1. Cream butter with the brown sugar until light and fluffy. Beat in the eggs and mix well. Stir in the salt, cinnamon, baking powder, boiling water, baking soda and flour. Mix to combine. Stir in the oats.
2. Drop cookies onto the prepared baking sheets. Bake for 10-12 minutes. Let cookies cool.
Filling
In a mixing bowl, beat butter for about 1 minute until creamy. Add the powdered sugar and mix on medium speed for 1-2 minutes. Pour in heavy cream and vanilla extract. Mix on high for 3-4 minutes until fluffy. Taste and add a pinch or two of salt, as needed.
Make sandwiches from two cookies with filling in the center. ( If you don't plan on eating all the cookies right away, I suggest keeping the cookies in an airtight container at room temperature and keeping the filling in a bowl in the refrigerator until you are ready to eat your cookies!)
