Crock Pot Pork Tenderloin

I agree with the recipe title for this main meat dish: Amazing Pork Tenderloin in the Slow Cooker. I found this recipe (well actually my husband Mark found it) on http://allrecipes.com

Ingredients:

1 (2 pound) pork tenderloin
1 (1 ounce) envelope dry onion soup mix
1 cup water
3/4 cup red wine
3 tablespoons minced garlic
3 tablespoons soy sauce
ground black pepper (to taste)

Place the pork tenderloin ( we bought ours from Trader Joe's) in the crock pot with the contents of the soup mix. Pour the water, wine (we used Charles Shaw red table wine from Trader Joe's; it was only about 4 dollars!), and soy sauce over the top, turning the pork to coat. Carefully spread the garlic over the pork, leaving as much on top of the roast while cooking as possible. Sprinkle with pepper. Cover. Cook on low setting for four hours. Serve with cooking liquid on the side as au jus.






Our whole apartment smelled wonderful for hours! The tenderloin was so tender and juicy! We also "made" Trader Joe's cornbread. Even though it came in a box, it was soooo tasty! We can't forget the asparagus. We put a light coat of olive oil on a cookie sheet. Then we rolled the asparagus stalks in the olive oil and sprinkled them with a little salt and pepper. We placed the sheet of asparagus in the oven (set to 400 degrees) for 12-15 minutes (or until they were tender). We sprinkled real parmesan cheese over the top of the asparagus. Yum! The rice from a box was just ok. I'm not really a big fan of rice in general.
