Banana Bread
I wanted something light and tasty to bring to a meeting, so I decided banana bread would be a good choice. This recipe is modified from the Food Network : http://www.foodnetwork.com/recipes/banana-bread-recipe/reviews/index.html?pn=4
Ingredients:
1 cup granulated sugar
8 tablespoons (1 stick) unsalted butter, room temperature (I used salted butter b/c that's what I had)
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt ( I used 3/4 of a teaspoon because of my salted butter)
Directions:
1.Preheat your oven to 325 degrees F and butter a 9x5x3in loaf pan.
2. Cream the sugar and butter in a large mixing bowl until blended well.
3. Add the eggs, one at a time, and beat well after each addition.
4. In a small bowl, mash bananas with a fork. Mix in the milk and ground cinnamon. In another bowl, mix flour, baking powder, baking soda, and salt together.
5. Add the banana mixture to the sugar and butter mixture and stir until combined. Add the dry ingredients, mixing just until the flour disappears.
6. Pour the batter into the pan and bake for about an hour (until a toothpick inserted in the center comes out clean). Set the pan aside to cool for 15 minutes. Remove bread from pan, invert onto a rack and cool completely before slicing.
Now it's time to go bananas!
