Fruit Pizza
I wanted a semi-healthy dessert that was a little unique, so I modified a recipe for Fruit Pizza by Pillsbury:
http://www.pillsbury.com/recipes/fanciful-fruit-pizza/1ba0fa0a-5f2a-451c-b82c-bf8076a0e4de
Ingredients:
1 roll (16.5oz) Pillsbury refrigerated sugar cookie dough
1 package (8oz) cream cheese, softened
1/3 cup sugar
1/2 teaspoon vanilla
canned peaches or madarin oranges
strawberries
blueberries
rasberries
kiwis
1. Preheat oven to 350 degrees. Grease 12in pizza pan with crisco.
2. Press cookie dough evenly throughout bottom of pan to form crust.
3. Bake 16-20 minutes or until dough is golden brown. Cool completely for about 30 minutes.
4. Beat cream cheese, sugar and vanilla in a small bowl with an electric mixer on medium speed until fluffy. Spread mixture over cooled crust.
5. Arrange fruit over cream cheese in any pattern you want.
6. Refrigerate until chilled (at least one hour).
7. Cut into wedges or squares. Serve!
