Egg Muffins
I wanted to find a breakfast casserole recipe, so I checked out Pinterest. I ended up finding a recipe for Egg Muffins and I liked the idea better! This recipe is adapted from: http://www.realliferealityblog.com/2012/01/tasty-thursday-egg-muffins.html
Ingredients:
10 eggs
parsley
salt
pepper
cheese ( I used feta, mozzarella, and cheddar in different cups)
chopped pieces of red and green peppers
chopped kalamata olives
chopped spinach
chopped cooked turkey sausage
Directions:
1. Preheat oven to 375 degrees. Grab your muffin pan and place two paper muffin liners into each cup and spray with cooking spray.
2. Fill each cup with your fixins (i.e. meat, veggies, cheese), until they are about 2/3 full.
3. Crack eggs into a large bowl and add parsley, salt, and pepper to your liking. ( You can add whatever spices you want!) Beat well.
4. Add the egg mixture to each cup until they are about 3/4 full.
5. Bake 25-35 minutes until muffins have risen and they are slightly brown on the top.
The muffins will keep at least a week in the refrigerator. They can also be frozen. Just thaw in the fridge before reheating and place them in the microwave on high for about 2 minutes.
I think I will serve these with some fresh strawberries! MMMMmmmmm!
