Crispy Herb Baked Chicken
Popeyes is one of my favorite places to get crispy fried chicken, but sometimes it's hard to find one around, or I start feeling unhealthy just thinking about it!! My husband found this healthier recipe to help me when I have fried chicken cravings!

Crispy Herb Baked Chicken
Ingredients
2/3 cup dry potato flakes ( I was surprised that i could find these at the grocery store! I bought Bob's Red Mill creamy potato flakes.)
1/3 cup grated Parmesan cheese
1 tsp garlic salt
a few shakes of McCormick's Montreal Steak Seasoning ( or your favorite seasoning)
1 (3 lb) chicken, skin removed and cut into pieces
1/3 cup butter, melted ( in a medium-sized bowl)
Directions
1. Preheat oven to 400 degrees. Grease or line a baking sheet(s) with foil.
2. In a medium bowl, stir in the potato flakes, Parmesan cheese, and garlic salt until well mixed.
3. Dip the chicken pieces into the melted butter, then roll in the potato flake mixture to coat. Place on the prepared baked sheet(s).
4. Bake for 45 to 60 minutes, or until the chicken is tender and golden brown.
