Banana Muffins II
I made banana bread recently, so I decided to stay with the trend and make banana muffins!

Banana Muffins II
Ingredients
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 large bananas, mashed ( I mashed mine with a potato masher)
3/4 cup white sugar
1 egg
1/3 cup butter, melted
Directions
1. Preheat your oven to 350 degrees F. Coat a muffin pan with non-stick spray/ melted butter or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
2. Combine the mashed bananas, sugar, egg, and melted butter in a large bowl. Fold in the flour mixture, and mix until smooth. Scoop into the muffin pan. ( I used an ice cream scooper.)
3. Bake in the oven for approx. 20 minutes (10-15 min. for mini muffins). The muffins will spring back when lightly tapped.
