Egg Muffins

I wanted to find a breakfast casserole recipe, so I checked out Pinterest. I ended up finding a recipe for Egg Muffins and I liked the idea better! This recipe is adapted from: http://www.realliferealityblog.com/2012/01/tasty-thursday-egg-muffins.html Ingredients: 10 eggs parsley salt pepper cheese ( I used feta, mozzarella, and cheddar in different cups) chopped pieces of red and green peppers chopped kalamata olives chopped spinach chopped cooked turkey sausage Directions: 1. Preheat oven to 375 degrees. Grab your muffin pan and place two paper muffin liners into each cup and spray with cooking spray. 2. Fill each cup with your fixins (i.e. meat, veggies, cheese), until they are about 2/3 full. 3. Crack eggs into a large bowl and add parsley, salt, and pepper to your liking. Zeeff Pot Roast

Pot Roast is one of my favorite meals! It's especially good when it's chilly outside. Ingredients:  3 1/2 lbs of beef shoulder or boneless chuck roast about a cup or so of flour 2 tablespoons of butter plus one stick (8 tablespoons) 1 small onion pepper oregano 3-4 small potatoes baby carrots Directions:  1. Cut off good size chunks of meat (3 to 4 inch pieces). 2. Rinse off the meat pieces in cold water. 3. Put flour on each side of the meat pieces and poke a few holes in the meat with a fork. 4. Place meat pieces in an electric skillet on about 320 degrees w/ 2 tablespoons butter and 1 small onion sliced and cut in half. 5. Cook meat pieces for a few minutes and turn until it the pieces are brown on both sides. 6. Once the pieces are browned, add 2-3 cups of water (covers meat half way in pan), one stick of butter, a few shakes of pepper and some shakes of oregano. 7. Turn temperature down to 250 degrees. 8. Fruit Pizza

I wanted a semi-healthy dessert that was a little unique, so I modified a recipe for Fruit Pizza by Pillsbury: http://www.pillsbury.com/recipes/fanciful-fruit-pizza/1ba0fa0a-5f2a-451c-b82c-bf8076a0e4de Ingredients: 1 roll (16.5oz) Pillsbury refrigerated sugar cookie dough 1 package (8oz) cream cheese, softened 1/3 cup sugar 1/2 teaspoon vanilla canned peaches or madarin oranges strawberries blueberries rasberries kiwis 1. Preheat oven to 350 degrees. Grease 12in pizza pan with crisco. 2. Press cookie dough evenly throughout bottom of pan to form crust. 3. Bake 16-20 minutes or until dough is golden brown. Cool completely for about 30 minutes. 4. Beat cream cheese, sugar and vanilla in a small bowl with an electric mixer on medium speed until fluffy. Spread mixture over cooled crust. 5. Arrange fruit over cream cheese in any pattern you want. 6. Refrigerate until chilled (at least one hour). 7. Cut into wedges or squares. Serve!

Spicy Chicken Rigatoni

One of my favorite meals is Spicy Chicken Rigatoni from Bucca Di Beppo. I decided to look on Pinterest to see if there were any "copycat" recipes for Spicy Chicken Rigatoni and there was! This recipe was modified from The Recipe Critic ( https://therecipecritic.com/spicy-chicken-rigatoni/ ) I believe this is equivalent to the Buca Large, which serves 4 or more. Ingredients: 2 boneless skinless chicken breasts cut into very small strips 1 tablespoon of minced garlic 1 teaspoon of red pepper flakes 1/2 teaspoon coarse black pepper 1/4 teaspoon salt 2 tablespoons olive oil 2 cups alfredo sauce ( I used a whole jar of Newman's Own) 2 cups marinara sauce ( I used just about a whole jar of Newman's Own) 1 cup peas 1 lb rigatoni noodles, cooked al dente 2 tablespoons butter Parmesan cheese and red pepper flakes to sprinkle on top Directions: 1. Crunchy Chicken

My mother-in-law introduced me to Crunchy Chicken!! It makes the house smell yummy, it tastes amazing, AND you can have fantastic leftovers! Ingredients chicken legs, thighs, and breasts (bone-in w skin- however many pieces you want) butter Lowry's seasoning salt oregano  Directions  ( Preheat oven to 350 degrees.) 1. Wrap your top oven rack with tin foil, spray with PAM and make small slits in the foil. ( I used a pizza pan with holes in the bottom.) 2. Rinse chicken pieces under cold water then place the pieces on the rack tin foil rack. 3. Put a few pieces of tin foil on top of the bottom oven rack (so it will catch the drippings). 4. Melt some butter (however much you want) and drizzle it on the top of the chicken pieces. 5. Sprinkle the top of the chicken pieces with Lowry's seasoning salt and oregano (however much you want). 6.
