Mulligatawny Soup I
The weather has been getting colder lately, so I wanted to find another soup recipe.

Mulligatawny Soup I
(This serves about 2 people.)
Ingredients
1/2 cup chopped onion
2 stalks celery, chopped
1 carrot, diced
1/4 cup butter
1 1/2 Tbs all-purpose flour
1 1/2 tsp curry powder
4 cups chicken broth
1/2 apple, cored and chopped ( I took the skin off. I also added little more apple, b/c it's just sooo good!!! )
1/4 cup white rice ( I used basmati rice.)
1 skinless, boneless chicken breast half- cut into cubes ( sometimes I use rotisserie chicken)
salt to taste
ground pepper to taste
1 pinch of dried thyme ( I didn't use this because my husband doesn't like thyme.)
1/2 cup heavy cream, heated ( I didn't add this to the soup. I didn't think the recipe needed it.)
Directions
1. Saute onions, celery, carrot, and butter in a large pot. Add flour and curry, and cook for about 5 more minutes.
2. Add chicken broth, mix well, and bring to a boil. Simmer for about 1/2 hour.
3. Add the apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until the rice is done.
4. When serving, add hot heavy cream.
