Weeknight Baked Chicken Parmesan

Ever have a craving for really good Italian food?! I had a huge craving for some chicken parmesan, so I found this recipe!

Weeknight Baked Chicken Parmesan

Ingredients
4 (8 oz) skinless, boneless chicken breast halves

1 cup flour

1 tsp salt

1/2 tsp ground black pepper

3 large eggs

1 cup Italian-style bread crumbs ( I used panko, b/c that's what I had)

1 cup grated Parmesan cheese

2 Tbs extra-light olive oil, or as needed for browning

1 (24 oz) jar of your favorite marinara sauce ( I used Newman's Own Marinara)

8 oz shredded mozzarella cheese

fresh parsley or basil for garnish (optional)

Directions 
1. Preheat oven to 425 degrees F. Lightly oil a large baking dish. ( You might need to use two baking dishes like I did!)

2. Trim the chicken breasts of fat. ( If the chicken breasts are very large, pound them between plastic wrap into 1/2 in thick cutlets.)

3. On a plate, mix together the flour, salt, and black pepper. Whisk the eggs on another plate, or a bowl. On a third plate, stir together the Italian bread crumbs with parmesan cheese.

4. Dip both sides of each chicken cutlet into the flour, then dip into the beaten eggs, letting the excess egg drip off. Dip the cutlets into the breadcrumb mixture, pressing them into the breading to make sure of a thick and even coating of crumbs. Set the prepared cutlets aside for about 10 minutes.

5. Heat a large non-stick skillet over medium heat, then add enough olive oil to coat the bottom of the pan. When the oil is hot, add the chicken in batches, sautéing them until golden brown, about 2 min. per side.

6. Place the chicken in the baking dish(es). Top each chicken cutlet with about 2 Tbs of marinara sauce. ( Reserve the remaining sauce to serve over pasta, if desired.) Then top with about 1/4 cup of shredded mozzarella. ( I used a LOT more mozzarella because I love cheese!)

7. Bake uncovered until the cheese is melted/ slightly brown and the chicken is no longer pink inside ( about 10 min.).
