Beef Wellington

My husband and I love watching Gordon Ramsay cook, and we always keep seeing him make beef wellington, so we had to try his recipe for our Christmas dinner! This recipe is adapted from: http://www.bbcgoodfood.com/recipes/2538/beef-wellington  Beef Wellington  Ingredients Beef fillet ( about 2 lbs 4 oz) 3 Tb olive oil 9 oz chesnut mushrooms ( I used button mushrooms) 2 oz butter 1 large sprig fresh thyme 3 1/2 fl oz dry white wine 12 slices prosciutto 1 lb 2 oz pack puff pastry, thawed if frozen a little flour for dusting 2 egg yolks beaten with 1 tsp water Directions  1. Preheat the oven to 430 degrees fahrenheit. 2. Place the beef fillet on a roasting tray, brush with 1 tbsp olive oil and season with pepper. 3. Slow Cooker Chicken Taco Soup

I've adapted this recipe from: http://allrecipes.com/recipe/70343/slow-cooker-chicken-taco-soup/  Slow Cooker Chicken Taco Soup  Ingredients  1 onion, chopped 1 16 oz can chili beans 1 15oz can black beans 1 15 oz can whole kernel corn, drained 1 8oz can tomato sauce 1 12 fluid oz can/bottle of beer 2 10 oz cans diced tomatoes with green chiles, undrained 1 (1.25 oz) package taco seasoning 3 whole, boneless, skinless chicken breasts 1 (8 oz) package shredded cheddar cheese ( optional) sour cream (optional) crushed tortilla chips (optinal) Directions 1. Place the onion, chili and black beans, corn, tomato sauce, beer, and diced tomatoes into a slow cooker. 2. Add the taco seasoning and stir. 3. Put the chicken breasts on top of the mixture. Spinach Squares

My mom used to make these when I was little, and even though they had spinach in them, I loved them! Now that I'm older and I do like spinach, they taste even better!! Spinach Squares  Ingredients 1 cup flour 1 tsp salt 1 tsp baking powder 1 cup milk 2 eggs, beaten 1/2 cup butter, (1 stick), melted 1 pk frozen chopped spinach, thawed and drained 1/2 cup chopped onion 1 lb sharp cheddar cheese, grated ( 2 8 oz blocks) Directions 1. Preheat the oven to 350 degrees. Grease a 13 x 9" pan. 2. In a large bowl, combine flour, salt and baking powder. 3. Add milk, eggs, and butter to the flour mixture. 4. Add spinach, onion and cheese and stir. 5. Pour the mixture into the pan and bake for 30-40 minutes, until the edges are slightly brown. Cut into squares. Serve warm or cool! ( Can be put into the freezer.)
