Parmesan Chicken Manicotti
Usually I'm not in the mood for Italian food ( I know, I know, you're thinking, "you're crazy!" The answer is yes, I am crazy. Moving on.... well..... one night I has a strong craving for something Italian after watching several shows on the Food Network and I found this recipe for manicotti on Pinterest (http://heartmindandseoul.com/parmesan-chicken-manicotti/).
Ingredients
7 pieces of cooked manicotti ( follow the directions on the box)
1 cup part skim Ricotta cheese
1/2 cup shredded Parmesan cheese
1 cup shredded, cooked chicken
1 egg
1 teaspoon oregano
salt and black pepper
1 can Italian style crushed tomatoes
2 tablespoons grated Parmesan cheese
1 tablespoon chopped, fresh basil leaves ( I used dry.)
1/4 cup Parmesan cheese
6-8 basil leaves ( I didn't use these.)
Directions ( Preheat oven to 350 degrees.)
1. In a medium bowl, combine cooked shredded chicken, Ricotta cheese, Parmesan cheese, egg, oregano, salt and pepper together and mix well.
2. Stuff each manicotti with about 1/4 cup of the mixture. ( This was hard, since I wanted to make sure the shells wouldn't break! I used a small spoon.)
3. Place crushed tomatoes in a small saucepan over high heat. Add 2 tablespoons grated Parmesan and 1 tablespoon chopped basil. Stir frequently until it starts to bubble. Simmer until heated through.
4. Spray baking dish with cooking spray and place stuffed manicotti in it. Pour prepared sauce over manicotti then sprinkle with Parmesan cheese. Place basil leaves on top.
5. Bake for 35 or until hot and bubbly.
