Slow Cooker Carnitas

Mark and I love tacos, so we decided to spice up our usual taco night. Oh yea, and we love Chipotle! Mark found this recipe for Slow Cooker Carnitas from allrecipes.com and changed it just a little bit:: http://allrecipes.com/recipe/slow-cooker-carnitas/detail.aspx (makes 10 servings)


Ingredients 

1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon crumbled dried oregano
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 ( 4 lb) boneless pork shoulder roast
2 cups chicken broth

Directions

1. Mix the salt, garlic powder, cumin, oregano, coriander and cinnamon in a bowl.
2. Place pork in slow cooker and cover the top with the spice mixture.
3. Pour the chicken broth around the sides of the pork, being careful not to rinse off the spice mixture.
4. Cover and cook on low until the pork shreds easily with a fork, about 7 1/2 hours. ( Turn the meat after it has cooked for about 3 1/2 hours. When the pork is tender, remove from the slow cooker and shred with two forks. Add meat to your tortillas with cheese and salsa! (see Two Tomato Taco Topping recipe)
