Turkey Meatloaf w Feta and Sun-Dried Tomatoes

I opened my fridge last week, and I was wondering what I should do with the ground turkey I bought at the store. I found this recipe on foodnetwork.com, and I'm sooooo glad I gave it a try! So easy. So tasty!

Turkey Meatloaf w Feta and Sun-Dried Tomatoes

Ingredients 

Vegetable cooking spray 

1/2 cup plain bread crumbs ( I used Italian bread crumbs)

1/3 cup chopped fresh flat-leaf parsley ( I used dried parsley)

1/4 cup chopped garlic and herb-marinated sun-dried tomatoes ( I used cherry tomatoes)

2 cloves garlic, minced, optional ( I didn't use garlic)

2 eggs, at room temperature, lightly beaten 

2 tablespoons whole milk 

1/2 cup crumbled feta cheese 

1 1/2 teaspoons kosher salt 

1 teaspoon freshly ground black pepper 

1 pound ground turkey

Directions (adapted from Giada De Laurentiis' recipe at http://www.foodnetwork.com/recipes/giada-de-laurentiis/turkey-meatloaf-with-feta-and-sun-dried-tomatoes-recipe/index.html): 

1. Preheat the oven to 375 degrees F. 

2. Spray a 9 by 5-inch loaf pan with cooking spray (I used an olive oil spray).

3. In a large bowl, mix the bread crumbs, parsley, tomatoes, garlic ( I didn't use garlic), eggs, milk, feta, salt, and pepper. 

4.Gently mix in the turkey. 


5. Pack the meat mixture into the pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes. ( I took mine out at 40 minutes, when it was golden brown on the sides.) 

6. Remove from the oven and let it sit for about 5 minutes.

 * If I were to make this again, which I will because it was soooooo good, I would probably eliminate the salt. I don't think it's necessary to add.
