Low Country Cookies

I wanted to make a sweet dessert for my friends, so I found this recipe for Low Country Cookies on : http://www.foodnetwork.com/recipes/paula-deen/low-country-cookies-recipe/index.html. This is a Paula Dean recipe, so you know it's got to be delicious, but not nutritious!


Ingredients: 

Filling: 

1 (16 oz) box graham crackers

12 tablespoons (1 1/2 sticks) butter

1 cup sugar

1 egg

1/2 cup milk

1 cup chopped pecans ( or any other nuts...I used walnuts b/c that's what I had at the time!)

1 cup shredded coconut

Topping: 

2 cups powdered sugar

1 teaspoon vanilla

4 tablespoons (1/2 stick) butter

3 tablespoons milk

(Filling):

1. Line a 13 x 9 in. pan with whole graham crackers.
2. Melt the butter in a saucepan and add the sugar.
3. Beat the egg and milk together; add to butter mixture.
4. Stir constantly and bring the mixture to a boil.
5. Remove from the heat. Add the nuts, coconut, and 1 cup graham cracker crumbs.
6. Pour the mixture over the whole graham crackers in the pan. Cover with another layer of whole graham crackers.

(Topping):

1. Beat all ingredients together and spread over the top layer of graham crackers.


Chill for at least 30 minutes. Cut into squares.
