Turkey White Chili
I found this recipe from emeals (http://emeals.com/). I thought it would be a good recipe to make when it's cold outside.
Ingredients:
1/2 lb ground turkey
1/2 c onion, chopped
1 clove garlic, minced
1 can green chili peppers, drained, chopped
1 t ground cumin
1 t oregano
1/2 t cinnamon
cayenne pepper and white pepper to taste ( I used black pepper)
1 can cannellini beans ( I think I used navy beans. )
1 can chicken broth
1 c shredded mozzarella cheese
Directions ( adapted from the recipe from emeals.com) :
1. Combine the turkey, onion, and garlic in a large pot and saute until the turkey is browned.
2. Stir in the chili peppers, cumin, oregano, cinnamon, cayenne pepper, and pepper.
3. Add 1/2 can cannellini beans and chicken broth.
4. Mash the remaining beans ( I just dumped the rest of the beans in) and stir along with the cheese. 5. Simmer until the cheese melts.
