Low Country Cookies

I wanted to make a sweet dessert for my friends, so I found this recipe for Low Country Cookies on : http://www.foodnetwork.com/recipes/paula-deen/low-country-cookies-recipe/index.html . This is a Paula Dean recipe, so you know it's got to be delicious, but not nutritious! Ingredients:  Filling:  1 (16 oz) box graham crackers 12 tablespoons (1 1/2 sticks) butter 1 cup sugar 1 egg 1/2 cup milk 1 cup chopped pecans ( or any other nuts...I used walnuts b/c that's what I had at the time!) 1 cup shredded coconut Topping:  2 cups powdered sugar 1 teaspoon vanilla 4 tablespoons (1/2 stick) butter 3 tablespoons milk Directions (adapted from http://www.foodnetwork.com/recipes/paula-deen/low-country-cookies-recipe/index.html) : (Filling): 1. Mediterranean Chicken Packets

Mediterranean Chicken Packets (recipe adapted from the book Super Cookery: Quick and Easy) Ingredients: olive oil skinless chicken breast fillets mozzarella cheese sliced zucchini sliced large tomatoes basil/ oregano ( I used dried b/c I already had them at home) pepper rice or pasta, to serve Directions: (preheat oven to 400 degrees F) 1. Cut pieces of foil about 10 inches square. Brush/spray the foil squares lightly with olive oil and set aside. 2. Make slits on the top of the chicken breasts. Place mozzarella pieces between the slits in the chicken. 3. Place about 4 slices of zucchini and 4 slices of tomatoes on the pieces of foil and sprinkle with pepper, basil, and oregano. 4. Place chicken breasts on top of each pile of vegetables. Wrap the foil pieces up around the chicken and vegetables. Don't forget to tuck in the sides! (Wrap it like a baked potato.) 5. Turkey White Chili

I found this recipe from emeals ( http://emeals.com/ ). I thought it would be a good recipe to make when it's cold outside. Ingredients: 1/2 lb ground turkey 1/2 c onion, chopped 1 clove garlic, minced 1 can green chili peppers, drained, chopped 1 t ground cumin 1 t oregano 1/2 t cinnamon cayenne pepper and white pepper to taste ( I used black pepper) 1 can cannellini beans ( I think I used navy beans. ) 1 can chicken broth 1 c shredded mozzarella cheese Directions ( adapted from the recipe from emeals.com ) : 1. Combine the turkey, onion, and garlic in a large pot and saute until the turkey is browned. 2. Stir in the chili peppers, cumin, oregano, cinnamon, cayenne pepper, and pepper. 3. Add 1/2 can cannellini beans and chicken broth. 4. Mash the remaining beans ( I just dumped the rest of the beans in) and stir along with the cheese. 5. Simmer until the cheese melts.

Crock Pot Pork Tenderloin

I agree with the recipe title for this main meat dish: Amazing Pork Tenderloin in the Slow Cooker. I found this recipe (well actually my husband Mark found it) on http://allrecipes.com .  Ingredients: 1 (2 pound) pork tenderloin 1 (1 ounce) envelope dry onion soup mix 1 cup water 3/4 cup red wine 3 tablespoons minced garlic 3 tablespoons soy sauce ground black pepper (to taste) Directions (adapted from http://allrecipes.com/recipe/amazing-pork-tenderloin-in-the-slow-cooker/ ): Place the pork tenderloin ( we bought ours from Trader Joe's) in the crock pot with the contents of the soup mix. Pour the water, wine (we used Charles Shaw red table wine from Trader Joe's; it was only about 4 dollars!), and soy sauce over the top, turning the pork to coat. Carefully spread the garlic over the pork, leaving as much on top of the roast while cooking as possible. Sprinkle with pepper. Cover. Cook on low setting for four hours. Serve with cooking liquid on the side as au jus....

My good friend Ann made this Greek Salad for me a few weeks ago, and I thought it was fantastic, so I had to make it myself! I found this recipe on the Pioneer Woman website. My friend Ann told me about the website, and I decided to give one of their recipes a try! Ingredients 1/2 cup olive oil 1/2 cup orange juice (freshly squeezed if possible; save the juiced orange halves) 2 whole lemons, juiced 2 whole limes, juiced 4 whole garlic cloves, peeled and smashed 2 whole onions, peeled and quartered 1 teaspoon salt 1 teaspoon black pepper 16 whole chicken legs flour or corn torillas, warmed pico de gallo (we bought some from Chipotle) guacamole ( look at Mom Z's guacamole recipe) cooked beans (pinto, black, refried)   Directions ( adapted from http://thepioneerwoman.com/cooking/2011/06/pollo-asado/ )  1. Mom Z's Guacamole

Ingredients 1 T finely chopped onion 3 avocados 1/2 t Lemon Juice 3 T salsa (Meijer – chunky mild) 1/4 t garlic powder 2 T hot sauce (Ortega- smooth) 2 small drops Tabasco sauce Directions Place all of the ingredients into a mixing bowl. Use a hand mixer to blend the ingredients together until you come up with a consistency you like for your guacamole.
