Low Country Cookies

I wanted to make a sweet dessert for my friends, so I found this recipe for Low Country Cookies on : http://www.foodnetwork.com/recipes/paula-deen/low-country-cookies-recipe/index.html . This is a Paula Dean recipe, so you know it's got to be delicious, but not nutritious! Ingredients:  Filling:  1 (16 oz) box graham crackers 12 tablespoons (1 1/2 sticks) butter 1 cup sugar 1 egg 1/2 cup milk 1 cup chopped pecans ( or any other nuts...I used walnuts b/c that's what I had at the time!) 1 cup shredded coconut Topping:  2 cups powdered sugar 1 teaspoon vanilla 4 tablespoons (1/2 stick) butter 3 tablespoons milk Directions (adapted from http://www.foodnetwork.com/recipes/paula-deen/low-country-cookies-recipe/index.html) : (Filling): 1. Mediterranean Chicken Packets

Mediterranean Chicken Packets (recipe adapted from the book Super Cookery: Quick and Easy) Ingredients: olive oil skinless chicken breast fillets mozzarella cheese sliced zucchini sliced large tomatoes basil/ oregano ( I used dried b/c I already had them at home) pepper rice or pasta, to serve Directions: (preheat oven to 400 degrees F) 1. Cut pieces of foil about 10 inches square. Brush/spray the foil squares lightly with olive oil and set aside. 2. Make slits on the top of the chicken breasts. Place mozzarella pieces between the slits in the chicken. 3. Place about 4 slices of zucchini and 4 slices of tomatoes on the pieces of foil and sprinkle with pepper, basil, and oregano. 4. Place chicken breasts on top of each pile of vegetables. Wrap the foil pieces up around the chicken and vegetables. Don't forget to tuck in the sides! (Wrap it like a baked potato.) 5.
