So....when I think of fall, I think of warm apples. I thought about doing an apple pie, but I wasn't sure how I would do with making the crust, so I decided to try an apple crisp instead, from Ina Garten ( http://www.foodnetwork.com/recipes/ina-garten/old-fashioned-apple-crisp-recipe/index.html ). Ingredients 5 lbs McIntosh or Macoun apples ( I used Gala apples b/c that's what I could find at the store) grated zest of 1 orange grated zest of 1 lemon 2 tablespoons of freshly squeezed orange juice 2 tablespoons of freshly squeezed lemon juice 1/2 cup granulated sugar 2 teaspoons ground cinnamon 1 teaspoon ground nutmeg For the topping:  1 1/2 cups flour 3/4 cup granulated sugar 3/4 cup light brown sugar 1/2 teaspoon salt 1 cup oatmeal 1/2 lb cold unsalted butter, diced Directions (adapted from http://www.foodnetwork.com/recipes/ina-garten/old-fashioned-apple-crisp-recipe/index.html )  1. Heat oven to 350 degrees and grab a 9x13 ungreased dish (corningware or glass is best) 2. Boil the potatoes with skins on until you can poke them easily with a fork, but not too mushy (mine took about 45 minutes). 3. Put the potatoes on a counter to cool. 4. Once they are cool, peel the skins off and cut them into 1 x 20 in. chunks and put them into a large mixing bowl. 5. Cut the Velveeta and cheddar cheese into chunks approximat...
