Banana Muffins II

I made banana bread recently, so I decided to stay with the trend and make banana muffins! I adapted this recipe from:  http://allrecipes.com/recipe/42719/banana-muffins-ii/?internalSource=hub%20recipe&referringContentType=search%20results&clickId=cardslot%201 Banana Muffins II  Ingredients  1 1/2 cups all-purpose flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 3 large bananas, mashed ( I mashed mine with a potato masher) 3/4 cup white sugar 1 egg 1/3 cup butter, melted Directions  1. Preheat your oven to 350 degrees F. Coat a muffin pan with non-stick spray/ melted butter or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside. 2. Combine the mashed bananas, sugar, egg, and melted butter in a large bowl. Fold in the flour mixture, and mix until smooth. Scoop into the muffin pan. ( I used an ice cream scooper.) 3. Bake in the oven for approx. 20 minutes (10-15 min. for mini muffins)...

Popeyes is one of my favorite places to get crispy fried chicken, but sometimes it's hard to find one around, or I start feeling unhealthy just thinking about it!! My husband found this healthier recipe to help me when I have fried chicken cravings! Ever have a craving for really good Italian food?! I had a huge craving for some chicken parmesan, so I found this recipe! Peppered Shrimp Alfredo

It was time again for another great shrimp recipe! My husband found this one, and we adapted it from all recipes.com. Peppered Shrimp Alfredo  Ingredients 12 oz penne pasta 1/4 cup butter 2 tbs extra-virgin olive oil 1 onion, diced 2 cloves garlic, minced 1 red bell pepper, diced 1 lb medium shrimp, peeled and deveined 1 (15 oz) jar Alfredo sauce 1/2 cup grated Romano cheese 1/2 cup cream 1 tsp cayenne pepper, or more to taste salt and pepper to taste 1/4 cup chopped parsley Directions  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. 2. Meanwhile, melt butter together with the olive oil in a saucepan over medium heat. Stir in onion, and cook until softened and translucent, about 2 minutes. Stir in the garlic and red pepper. One of my new favorite restaurants is Ragland Road, located in Disney Springs in Orlando, FL. Their Irish brown bread with Guinness reduction is fantastic, so when I saw this copycat recipe, I just had to make it! My husband and I wanted to try a new recipe, so we decided to make a shrimp boil! We found a great recipe on food network.com! Shrimp Boil  Ingredients 2 lemons, halved, plus wedges for serving 1/2 cup Old Bay Seasoning 8 cloves garlic, shells left on 1 large red onion, quartered 6 sprigs fresh thyme 1 lb baby red potatoes/ purple potatoes 4 ears corn, husked and snapped in half 1 1/4 lbs large shrimp, unpeeled, deveined, rinsed 2 tablespoons unsalted butter hot sauce, for serving (optional) Directions  1. Fill a large pot with 4 quarts of water. Squeeze the lemon juice into the water and add the squeezed lemon halves. Add the Old Bay, garlic, onion, and thyme. My husband and I love watching Gordon Ramsay cook, and we always keep seeing him make beef wellington, so we had to try his recipe for our Christmas dinner! This recipe is adapted from: http://www.bbcgoodfood.com/recipes/2538/beef-wellington  Beef Wellington  Ingredients Beef fillet ( about 2 lbs 4 oz) 3 Tb olive oil 9 oz chesnut mushrooms ( I used button mushrooms) 2 oz butter 1 large sprig fresh thyme 3 1/2 fl oz dry white wine 12 slices prosciutto 1 lb 2 oz pack puff pastry, thawed if frozen a little flour for dusting 2 egg yolks beaten with 1 tsp water Directions  1.
