Ultimate Chicken Fingers

Chicken fingers were always tasty when I was little, but now that I'm older, I want to make sure the ones I make are at least somewhat healthy. Check out my modified version of this recipe: http://mommyimhungry.blogspot.com/2010/10/ultimate-chicken-fingers-gluten-free.html Ingredients: 3/4 cup Bisquick mix 1/2 cup grated Parmesan cheese 1 teaspoon paprika 1/2 teaspoon salt 1/2 teaspoon salt 1/2 teaspoon garlic powder 3 boneless, skinless chicken breasts ( 1 lb), cut crosswise into 1/2-inch strips 2 eggs, slightly beaten cooking spray Directions: 1. Preheat oven to 450 degrees. Line cookie sheet with foil or parchment paper, spray with cooking spray. 2. Stir Bisquick mix, cheese, paprika and salt in a bowl. Usually I'm not in the mood for Italian food ( I know, I know, you're thinking, "you're crazy!" The answer is yes, I am crazy. Moving on.... well..... one night I has a strong craving for something Italian after watching several shows on the Food Network and I found this recipe for manicotti on Pinterest ( http://heartmindandseoul.com/parmesan-chicken-manicotti/ ). Ingredients  7 pieces of cooked manicotti ( follow the directions on the box) 1 cup part skim Ricotta cheese 1/2 cup shredded Parmesan cheese 1 cup shredded, cooked chicken 1 egg 1 teaspoon oregano salt and black pepper 1 can Italian style crushed tomatoes 2 tablespoons grated Parmesan cheese 1 tablespoon chopped, fresh basil leaves ( I used dry.) 1/4 cup Parmesan cheese 6-8 basil leaves ( I didn't use these.) Actually Delicious Turkey Burgers

I love red meat, but I'm "trying" to eat healthier. I'm starting to love ground turkey, so I slightly modified this turkey burger recipe from allrecipes.com . ( I still can't get Mark to eat them.) http://allrecipes.com/recipe/actually-delicious-turkey-burgers/detail.aspx Ingredients  1.5 lbs ground turkey 2 tablespoons seasoned bread crumbs 2 tablespoons finely diced onion 1 egg white, lightly beaten 2 tablespoons chopped parsley ( I used dried b/c I'm cheap!) 1/2 clove garlic, peeled and minced 1/2 teaspoon salt 1/8 teaspoon ground black pepper Directions  1. In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg white, parsley, garlic, salt and pepper. Form into 5/6 patties. 2. Cook the patties in a medium skillet over medium heat, turning at least once, until darker brown.

Firecracker Grilled Alaska Salmon

My favorite fish is salmon, and I like it plain Jane, but Mark likes it with a kick, so he found this recipe. I'm so glad he did, because this recipe is tangy and a little spicy!  http://allrecipes.com/recipe/firecracker-grilled-alaska-salmon/  We've modified this recipe just a little bit, especially since we baked the salmon instead of grilling it. Ingredients  16 oz salmon fillet 1/2 cup oil oil 4 tablespoons soy sauce 4 tablespoons balsamic vinegar 4 tablespoons green onions, chopped 3 tablespoons brown sugar 2 cloves garlic, minced 1 1/2 teaspoons ground ginger 2 teaspoons crushed red pepper flakes 1 teaspoon sesame oil 1/2 teaspoon salt Directions  1. Place salmon in a medium, glass dish. In a separate medium bowl, combine olive oil, soy sauce, balsamic vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Hilah's Spinach and Artichoke Dip

Looking for a warm dip for a cold day? Hilah gave me this recipe to try out! Ingredients  4 cloves garlic (*I use about 2 teaspoons of the jarred pre-minced garlic) 1 (10 ounce) package frozen chopped spinach, thawed and drained 1 (14 ounce) can artichoke hearts, drained and chopped 1 (10 ounce) container Alfredo-style pasta sauce (**I typically get the roasted garlic flavored Alfredo) 1 cup shredded mozzarella cheese 1/3 cup grated Parmesan cheese 1/2 (8 ounce) package cream cheese, softened Directions 1. Preheat oven to 350 degrees. 2. If using fresh garlic:  Place garlic in a small baking dish. Bake in the preheated oven 20 to 30 minutes, until soft. Remove from heat. When cool enough to touch, squeeze softened garlic from skins. 3. Mini-Cinis

I love Cinnamon Rolls, so when my friend/co-worker brought these tasty little things to work one day, I HAD to get the recipe! Ingredients  2 (8oz) can of refrigerated crescent rolls 6 Tbsp butter or margarine, softened (I used unsalted butter) 1/3 cup firmly packed brown sugar 1/4 cup finely chopped pecans 1 Tbsp sugar 1 tsp ground cinnamon 2/3 cup powdered sugar 1 Tbsp milk or half and half 1/4 tsp almond or vanilla extract (I used vanilla) 1/8 teaspoon salt Directions UNROLL crescent rolls, and separate each dough portion along the center perforation to for 4 rectangles (2 from each can); press diagonal perforations to seal. STIR together butter and next 4 ingredients; spread evenly over one side of each rectangle.  Roll up jelly roll fashion, starting at the long end.  Gently cut each log into 6 (1-inch) slices, using a serrated knife. Place rolls 1/4 inch apart in 2 greased 8-inch cake pans. BAKE at 375 degrees for 15-18 minutes or until golden....
